i bought 5kg of tomatos for 3 euro on the market. i want to make some sauce but i dont know what i will be using it for yet.
would it be prudent to just deskin them, quarter them and simmer them down to sauce without adding anything? then freeze it and add whatever i need for that dish and simmer it again.
or is there something i can add that would fit every dish?

Just make a basic tomato sauce with them. Add onion and garlic and seasoning if you like, otherwise just mix those in when you cook with it. I'd personally make it with onions, garlic and some thyme and basil so I have it ready to go whenever i need it

Dont freeze the tomatoes whole. Ruins the texture

Yes, great idea. Making tomato sauce from scratch takes a while, having it readily prepared makes that a whole lot easier

It's fine to just do the tomatoes and freeze it. That's what I do with stock. Some people make stock with a bunch of aromatics, pepper, etc. but I don't always want that in everything.
