It's winter and it's time for a hot hearty soup to warm the bones.

What are your favorite winter soups, /ck/?

Potato leek is the best answer, pairing well with hearty dark breads like pumpernickel and honey oat. A nice chicken tortilla with Chipotle warms you up but some of the ingredients are out of season so it's not truly a winter soup. French onion is fine, but winter usually calls for creamy soups.

Try a chicken corn chowder OP.

Literally any warm soup. But my favorites are tomato soup (with a poached egg added), french onion, posole, beef stew, & chicken noodle. The classics never go out of style

Bacon potato with kale.
>1 or so pounds of cut bacon
>red potatoes
>onion
>carrot
>pint of heavy whipping cream
>6 pack of beer
>chicken stock
>herbs and spices
>kale
Open beer Fry bacon in Dutch oven, pour off grease. Open beer. Sweat carrots and onions. Deglaze using third beer. Add potatoes herbs and pepper, pour in chicken stock and boil covered for 2 hours or out of beer. Lower heat, add kale and heavy whipping cream. Serve.

More of a broth than a soup but I like this;

>fresh turmeric
>ginger
>galangal
>kaffir lime leaves
>lemongrass
>salt
>pepper

Simmer for 1hour30, strain, add a squeeze of lime/lemon and some fresh cilantro

Ham hock/bone and white bean soup. So simple just onion, carrot, celery, garlic, beans, water and the ham. Simmer @ 3-4 hours. Serve with crusty bread or cornbread.
