Learn to flip dude. It’s not that hard. Practice with dry beans in the pan. Butter pan, put eggs in, when the eggs unstick from the pan and can slide around freely, the first side is done, flip. Kill the heat after the flip, and same deal as before, when they move freely in the pan they’re done.

What do you mean? That’s the sure fire way to get over easy, when they slide around in the pan it means that the whites have set, so you want to flip them or remove them from the heat right at that point so the yolks don’t cook as well.

Just check Kenjis fried eggs recipe. The secret is to use a shitload of oil and dump it over the whites while keeping it away from the yolk.

Try cracking your eggs into a mesh strainer first. The more liquidy parts of the whites will strain out and you'll be left with a nice firm white around the yolk.

Don't cover. Just take the time. Let them cook gently until whites have set. Then cut heat and give them another minute or two. Perfect sunnyside every time.

cook on low you can cook on med in the beginning but it should be on low the majority of the time and definitely when you flip
after the bottom is sufficiently cooked flip once to lightly cover the yoke with white and sort of seal it in after the flip cook as long as you want based on how liquid or solid you want the yoke
ideally if you do everything right no part of the egg should get very browned

My technique:

Fry the eggs in medium-high heat. Even mix of butter and oil (butter for browning and flavour, oil for the higher smoke point and does a better job of keeping them from sticking)

Once the edges of the egg are starting to brown, turn off the heat. Leave the pan on the element and cover with a glass lid. Give it a little time and the steam will cook the top of the egg without overdoing the middle.

Perfect dipping eggs.

4. if the oil is hot turn the heat to low
5. put the eggs in the pan
6. pop the yolk
7. put the lid on the pan

9. leave alone with the lid on for 5-10 mins
