Often times a good steak house will buy a full quarter or half. Select is a grading process used by the gov inspectors. A primal (as opposed to a prime) is due to the location of the cut on an animal. The fed does not regulate where the cut is taken from. The standards are based upon marbling and not where the meat is taken from.

Don't order steak or go to a steak house, it's overpriced and just salt and pepper. Once you get the cooking down there's nothing you can't replicate at home. Just go to a fancy butcher if you want the aged and grass fed stuff

I work at a steakhouse and can confirm.

The only thing we have that is a bit unique is a big proper coal grill and we can do any size they want, up to a kilo (eurosteakhouse)

Any while you can do that at home most people really wont.

I never ever buy steak when i'm out.
