Have you fish bois ever tried Soupe de Poisson?
It’s an amazing French fish stew made with smelt, cod, fennel, onion, leek, saffron and orange zest. It’s all slow simmered together then pressed through a tammis for a velvety texture.
I’ve asloe been thinking of trying a Clam chowder using vichyssoise as the base. Thoughts?

That's basically what the base is except it's not pureed. Frankly, the chunky potatoes are what makes the chowder, though, so take that into consideration.
