Why is this cheese so goddamn expensive? It's like almost three times PDO Parmigiano-Reggiano by weight.

Pecorino-Romano is strictly a sheep's milk cheese, while Parmigiano Reggiano is cow's milk, which is cheaper. Pecorino Romano also has a smaller PDO area than ParmReg, meaning fewer places can legally produce it.
