I've eaten a fair amount of street food in korea from stands where they chopped up live sea cucumbers and you dip the pieces in a kolchujang sauce to pojangmachas (street tents) and only got sick once and tbf, I was eating a lot of raw stuff. It was a pretty bad case as it got to the point I was shitty every 20 minutes or so and it was just a cloudy mucous, more like snot than feces. Whent to the army clinic and they gave me a shot of antibiotics, some pills and something to stop me up and it cleared up in a couple days.

The worst case of food poisoning I've had was from eating some sort of a raw fish salad (as recommended by a local friend) in Da Nang. Almost equally bad was a bowl of ox tail stew at an expensive restaurant in Lombok, but I suspect that was because I went there late at night and the meat had just been left out for too long. In terms of frequency, nothing beat my visit to Delhi. Every meal would lead to some light diarrhoea so I think that's due to the laxative-like effect caused by a high concentration of spices rather than low hygiene level.

I've eaten at plenty of back country developing nation eating establishments and i've never gotten sick once. What you need to be worried about is food that isn't fully cooked (which you can tell right away when it isn't), food that is being prepared in blatantly unsanitary conditions, and drinking water.

When I travel in SEA, I expect to get some at least once but usually only once for a few days.
Restaurants are more dangerous than street stalls for whatever reason.
Tourist restaurants in China are super dodgy, you're better off eating at tiny local restaurants with no English or street food.

Similar thing happened to me but a few years later I took a comprehensive STD test and came up postive for Hep-A antibodies but not the disease, which is reasonably common. You just end up getting over it and then being immune. It basically hits you like food poisoning and that's usually how you get it though you can get it from oral sex too.
