A London broil that is cut into 1/2 inch to 1 inch cubes that I toss in the oven, sear them and toss them together into a large container containing some form of cooked potatoes (quartered steamed Idaho potatoes, frozen shoestring fries fried in vegetable oil, or frozen steak fries baked in a crisper pan) throw on a bunch of seasonings (sea salt, cracked black pepper, cayenne pepper) drown it in steak sauce (takes a small bottle for a batch) and toss it around to make sure everything is covered.

A pesto slathered salmon filet brailed until lightly blackened, but cooked inside.

Served with linguine in a garlic butter or Alfredo sauce, and rice pilaf.with a bit of adobo and turmuric to add some color contrast. Simple salad with a raspberry walnut vinagarette on the side. Small antipasto platter if serving 4 or more people.

Spaghetti Carbonara.

I buy one of those bacon blocks that are a thick slab of meat, cut some up, cook it up with some garlic while preparing the pasta, then mixing it together, throwing in the pepper, before lowering the heat to basically nothing, waiting 3 minutes, then throwing in beaten eggs into the mix and mix until incorporated. I sprinkle the cheese on top when I'm about to eat, but don't use it when actually making the dish. It's pretty good.

My chili has won a couple cook offs and always seems to never have leftovers if I bring it to a football party. I'm happy to share it with y'all because I really like it and I think it's worth spreading and making more people happy:

Ingredients:
-4-5 pound chuck roast
-3 strips of thick bacon, diced
-1 16 oz can of chipotles in adobo sauce
-1 standard can of tomato puree (spring for the good italian stuff)
-2 whole dried and toasted ancho chilis
-3 cups beef bone stock
-1 can pinto beans
-1 can red beans
-1 large onion finely diced
-1 large green bell finely diced
-2 freznos cut down the middle with seeds removed and cut into slivers
-1 small red bell finely diced
-3 cloves garlic
-2 tablespoons blackstrap molasses
-1 spice blend batch
-neutral oil

Spice batch:
-2 tablespoons dark unsweetened cocoa powder
-3 tablespoons chili powder
-2 tablespoons cumin
-1 teaspoon mexican orgegano
-1 teaspoon crushed red pepper flakes.
-2 teaspoons paprika
-1 table spoon ground black pepper
-salt to taste

-Pre-salt your chuck roast the night before and leave it for minimum 8 hours to sit in the fridge
-Set your oven to 275º
-Blend your chipotles in sauce with the tomato puree and set aside
-In a shallow soup pan on a medium heat range, sweat down your bacon and remove once it starts to brown.
-Add in your sofrito (diced peppers and onion) into the leftover fat and sweat down until onions start to become translucent but not all the way cooked through
-Add a couple tablespoons of oil if not lubricated enough and add in your spice batch and diced garlic. Saute with veggies until the mix begins to smell
-Kill the heat and place the chuck roast in the pan, then add in your chipotle and tomato mixture, beef stock, bacon pieces, and finally the whole anchos
-Into the oven for about 3-4 hours, until the meat shreds with little effort
-During the last hour, add drained beans
-Serve with a dollop of sour cream and a few shreds of sharp cheddar

They impart flavor if you do low and slow cooking, which is why you don't need as many. Believe me when I was adding a ton of them with the low and slow method, that's all your tasting. The flavors aren't getting cooked out at a high heat so it's a very different cooking method.

Also in terms of the canned beans, with a dish like this it's not actually that big a deal because they're getting covered up by the other flavors so you're not exactly missing out on abuela's soaked beans in lard method. You could absolutely sub whatever bean method you prefer with no issue, but having done many methods with the beans throughout my chili trials, I've found that it doesn't make that much difference long term. As long as you're not buying a shitty brand or heaven forbid a pre-seasoned can you're good.
