saw some indonesian dish posted here last week. I can't find the link right now, but essentially, cook eggplant with a little oil and chili garlic sauce, remove, brown ground pork, drain, combine.
I also added some nappa cabbage and shallots, a little fish sauce and tamarind, some seasoned rice vinegar.
Was pretty good.
