The best bulk overture is Valrhona so I've heard, but it's so expensive I've never tried it.

More affordable and obtainable brands include Callebaut, Ghirardelli, Godiva, Green & Blacks's, & Endangered Species.

I've read Dove & Lindt are the best milk-chocolate varieties.

My favorite brand is Dandelion Chocolate. All their bars are only cacao (70+%) and sugar, nothing else. It's pretty delicious, you can really taste the differences between, say, Venezuelan cacao and Madagascar cacao. It's the kind of chocolate you enjoy with some espresso or a red wine.
