When I was young, my mother would occasionally buy Chaumes. It was my favorite cheese, snd I considered it the “perfect” cheese as far as flavor, and texture.
Sadly, I haven’t been able to find it locally for years, and online prices seem high.

Currently I’m enjoying St. Nectare and Taleggio.
