This. It's why it's always recommended to use a big pot for deep frying, even if you aren't using much oil. This way if it does start bubbling up too much, it'll still be contained.

And if it does ever catch on fire, if you can move it safely off the burner, just do that. Don't put a lid on, that actually helps the temperature go up faster. And obviously don't shake the pot around. Use a fire extinguisher, baking soda, salt, etc. to put out the fire, don't use water because that just makes it flare up more. The ice crystals on the french fries are what made the oil boil over in the first place.

In an attempt to put out a fire on the grill, a manager who is does actually know what he is doing, grabbed the wrong one and thew a box of cornstarch on it.

The fire went out. Only because it caused an explosion. There were no serious injuries, but they lost any exposed hair including eyebrows and had mild flash burns.
