I went to one that had business cards from all the farms they sourced from, that was in Boulder CO though where people have more money than sense.

I'd ask about the bread with cultured butter. If the bread seems interesting, I'd start with that and the pork coppa. Beef tartare. Their carbonara sounds interesting but if it's beans INSTEAD of pasta, I might prefer the polenta and chicken confit. I'd convince my boyfriend to order the sea bass. We'd be eating some of that fig cheesecake with honeycomb ice cream too.

I didn't say anything bad about it, I just specified that it's because of supporting local business, not because they think they sourced the best tasting tomatoes available and want to gloat about it. Though, I can't imagine picking out something like a tomato and saying, man, I just can't live without more of these tomatoes. I only ever really spend time in flyover land and the northeast, good tomatos are literally worth their weight in gold. I have a BLT maybe 3 times a year, if they're really good I'll put some basil and mozzarella on them. I'd probably pay 5 dollars for a perfect tomato, everything I can get is watery garbage that's mushy and doesn't have flavor. I obviously only ever buy in season, doesn't help. I grow some myself but I only have so many.

That's not unreasonable if they are serving good chicken (read: not factory farmed). Yeah, you can buy a shitty flavorless chicken for $5, but one that doesn't suck costs a lot more than that. Add the usual 3x multiplier for restaurant food cost and it's not that out of line. It's no different than a high-end steakhouse charging a lot for dry-aged high-grade beef, or from a fancy sushi joint charging a lot for O-toro.

If you "only have so many" then you're a shit tomato grower. Once our tomato plants started fruiting we had pounds and pounds of tomatoes every week. We'd fill up empty ice cream buckets with them and give them away for free. More tomatoes than we ever knew what to do with and no one was ever out there weeding or pruning the garden.

And as for the cost of the chicken, we covered that far higher in the thread. If they are selling you factory farmed chicken for that price it is indeed a ripoff. However, at that price point they are certainly going to be selling you a much costlier chicken, the same way that a fine steakhouse is not going to be using walmart tier meat. A good chicken is a lot more expensive than factory farmed shit, the same way that a dry-aged heritage breed beef steak is a going to be a lot more than $20/lb raw.
