Old school Italians made their pasta with water, alone, and no egg. I haven't tried that, but that's pretty much what store bought shit is, so why bother.

I normally use large eggs and need to add some water to get the soft consistency I want. May not even need water with x-large eggs.

Theres not a ton of moisture in egg yolks, it makes a super elastic dough best for stuffed pasta but is fine for tag or fetuccini
