An old, famous, steak house near where I grew up, would take sides of beef and hang them in the attic. After a few days they'd be green. They cut off any decomposition, but the dark areas like you are showing are just from lack of oxigen. It's fine. Best, most tender, steak you can get.

Its the difference between decomposing in a grocery store container versus decomposing in an environment with controlled temps and humidity. I don't know all the technical stuff but you can't just leave a steak on your counter and eat it a week later.

Humidity control probably keeps it from pure decomposition. If it's kept dry, it should be fine. the wetness from a more humid environment will cause it to decompose int he slimy way you're probably thinking of.
