sear, then season, flip back on the seasoning if you feel it's necessary (going for anything harder than rare on a 1/2" or thicker steak), or if you're using an electric burner/teflon/any combination thereof.

This is my usual method, but recently I tried something different. I used bacon fat, which has a relatively low smoke point, and cranked the stove to high. It actually turned out great. The steak had a beautiful orange-brown char, and tasted slightly smoky. I mean my kitchen was smoked out like fucking Dresden but the steak was really good.

I like NY strips and am poorfag so have to cook with electric stove. Most of my cooking is done in a cast iron to try and counter this.

Pic related is 3 minutes each side on a medium-high setting (6). Let it hit room temperature, pat dry, and salt both sides. Wait another 30 minutes. Heat up your cast iron (takes like 10 minutes and everyone fucks this up by using it too early). Throw some high smoke point oil in there and when it starts shimmering throw the steak in. Last 2 minutes turn off the burner and throw in butter/garlic/thyme and pepper the top. Plate it and let it rest 5 minutes before eating.

I'm fucking retarded so this is prolly all kinds of wrong but it is pretty gud. Pic related, one I cooked.
