Absolutely none of those are essential and two arent spices. Garlic and onion should be fresh not dried. The others are okay to add but not essential. If you just have to add spices then start with cumin and oregano...then coriander. Heat and flavor will come from dried chiles. By dried chiles i mean ancho, mulatto, guajillo, and chipotle...not crushed red pepper flakes or cayenne powder. A good simple chili is dried chiles, meat, garlic, onion, water, and salt.

Needs garlic and crushed tomato or tomato paste. This style chili is great for tortilla fillings, but not to eat straight from a bowl. For that, meat should be ground and pinto beans added.

Add onion, saute until transluscent
Add garlic, meat, and chilies: brown
Add tomatoes, broth, cornmeal, cumin, and pepper
Stir well, simmer slow for 30 minutes
Add beans if you want...yes it's ok
Add 2 tbsp salt, stir and simmer an additional 5 minutes before tasting
Adjust with remaining salt if necessary
Eat

Now a couple things... beans. Some say yes, others say no. I say it's your chili, do what you want.
Salt....this recipe calls for kosher salt not table salt. If you use table salt, cut it back by one-third.
Chilies.... throw out that horrible jar of "chili powder". Get whole dry chilies and grind them yourself. It makes a huge difference. Ancho, Pasilla, and New Mexican chilies are a good base, but use whatever you have and like. This batch was loosely 7 anchos, with 5 chipotles, and 9 moritas... but a full cup after grinding.

Don't have an ingredient? So what. It's chili. Want to add something? Go ahead... it's chili.

My dad's prone to bouts of gout so he can't have beans. I'd love to add beans in the chili I cook but last time I did it I felt real guilty when he got all pumped up to have some before I told him that I put beans in, due to the recipe calling for it.

I apologized for it, but then he went all "Ahh that's okay son, I'll just go get something from the nearby carinderia." (i'm from a third world country). He was never a self-centered guy, and usually gives up his share/time for when me and my siblings need/want something. With my mom and 2 sisters, me and him are the only 2 guys in the house, and I should always have his back for even the tiniest things, I believe.
