Was low on food so tried to make something edible with what I had in the cupboard. Decided on makeshift risotto carbonara.

Fried diced leftover ham in some olive oil with celery salt and paprika (the spices that smelled most like whatever it is they put on guancale) and tossed it in white rice with a couple eggs, a couple yolks, some cracked peppercorns, and parmesan cheese (which I had to mince with a knife because I only had the shredded kind)

This probably warrants capital punishment in Italy, but it turned out alright. Better than making a trip to McDonald’s.

My brand I guess. I had one lg eggplant. Peeled and sliced real thin. Salted for a few in a colander to drain. Then rinsed, dried and dipped in eggwash then plain bread crumbs. Fried em up. Layered a lil sauce on bottom ( like 1/2 cup) , good layer of eggplant, Parmesan, eggplant, Parmesan, topped with remaining sauce ( about 1 1/2 c) and a lil cheese. Baked 350 x 35 min uncovered. Easy. If u can't make your own sauce use Prego traditional jar sauce. Turns out great every time. Let sit 30 min before slicing.

Eh... not really recommended but it's prolly ok in small amounts... you would have to eat a lot of it raw to get sick from it... unless your allergic to it. I've eaten it raw with no ill effects just tastes bitter.

Yeh. I roast a pound of them in a pan with some salt, pepper, and a smidge of tomato paste. Then they go into a pot with some aromatics and I let it cook down until it's at the right flavor/consistency. It's really good. I usually make ramen with it but I started setting aside a small container in the freezer and use it in some other dishes like Japanese rolled omelettes.

Had a big get together with wife's senpai. My wifes brother gave her a bunch of deer meat so yesterday she prepped it all and this PM she made fried deer steaks, mashed potatoes/gravy, fresh green beans, and grilled corn on cob and a lemon meringue pie. All I can say is that woman can cook!

She makes this crazy good creamed horseradish and lemon dipping sauce for the venison nuggets that's out of this world. She keeps telling me she'll show me how to make it but she never does.

I heated the chicken up in the garlic butter, and then tossed in the noodles. These are shirataki because I can't have the carbs. It's key here to cook them till they're dry in the pan, and I fucked up and didn't put the chicken in AFTER these noodles. I should have. don't make my mistake.

I added in the broth and 1/2 cup of heavy cream here to the noodles/chicken.

A note on the broth: I'm proud of it. I made it lastnight and this morning by simmering the carcass of the chicken all night. It cooked for about 18 hours. I had to add a little salt to it, but it was super easy and a smart use for the carcass. Part of it's in the fridge, and this was what wouldn't fit

Bam, It tastes like heaven. I didn't add any salt or anything, because of the other ingredients salt levels. This was smart, because it turned out perfect and not salty at all - but well salted. Also, it looks pretty even though I couldn't find a real bowl so I'm eating it out of a mixing bowl.

It tasted really wonderful. I regret using sweet gochujang, and wish I had bought a tub that wasn't so sweetened... But I got this before I cut carbs.... It's a struggle to find a place for it in my diet right now. The actual work was really not that bad though. Pick chicken clean, toss in pot and top up with water, strain, heat up chicken and ingredients, combine with stock. Soup!
