I used to have a Mexican food truck park in an empty lot next my apartment for about a month a few years back. There's top 10 chef type restaurants in every neighborhood, I'm talking world class buzz and historical restaurants alike, and most are entirely Mexican menus and TDF.

No no no. Tacos al carbon is what you want. A good steak taco is char grilled, crispy bits of caramelized fat with smoke.. something delicious like skirt steak, or filet. Soft freshly made tortilla. When you want something cheap, you're buying pieces and parts if you like offal, or tougher cuts of steak pounded and overchopped. When you want a steak, do you personally go to a steak restaurant, a Dennys, or buy it from some street vendor? Think about that.
Mexican food is not over rated. There are amazing soups, intricate complex recipes, and great variety in every course. But, like anywhere else, people scarf down food to feel full, or they are willing to spend more on ingredients to have exquisite experiences. Corn smut is > truffles.
I was on business in Atlanta a couple weeks ago and ate downtown at Alma Cocina and had a thoroughly delightful experience, from my housemade tequila served over a single giant guava-lime-chile sorbet ice cube, to the esquites, to the tender ceviche, to the mole negro with plantain mash, to the goat cheese cheesecake reminiscent of goat cheese caramels you can get in your cajeta candies in Mexico City.
Look at a menu at a taco truck and if the type of beef isn't listed, don't get it. Are they serving pastor tacos? Then, get that. Ask what they do best.
