I've had plenty of stouts that are decently bitter. Most of the ones I drink taste kind of like black coffee. The ones were all you get is sweetness are shit, they need bitterness to balance them out. Also I don't really see a problem with other "desserty" flavors being present as long as their subtle. The main flavor should be a more bitter full bodied stout flavor.

IPA's are generally babby's first craft brew so most microbrews keep 1 or 2 in rotation, but most people move on to more complex beers where other flavors than simply hops are detectable. It's just a natural part growing up and microbreweries recognize that and are producing a lot of other styles now for seasoned adults.
