yes they deep fry things, i'm generalising obviously, generally though, they don't saute, and they don't brown. especially in terms of how they treat red meat, which wasn't even traditionally eaten in Japan. That is not even true; you can buy the fucking cubes yeah but most people make it from scratch. It's actually pretty easy to make and tastes amazing. I ate curry rice every other day for about half a year and I never got tired of it.

Nearly all of Japanese curry preparations sold in stores (which is what the Japanese use to make curry rice at home) are disgusting. Even Korean curry, which started out as an exact imitation of Japanese curry, is better than the nasty shit they eat in Japan.

Somewhere down the line, the general Japanese expectation of what curry is supposed to taste like went off kilter, and they all decided to eat shit. That said, there are curry restaurants in Japan that do really nice Japanese style curry that uses white miso to give another layer to the taste.
