I worked summers back in school at an ice cream parlor and according to gov't health standards we had to take apart all the parts that come into contact with the ice cream every ~5 days and put them in sanitary solution for a while.
Always did it before opening hours though cause it wasn't some shitty chain where no one gave a fuck.
