Whats the best way to can your own sardines? Trying to save some money.

Get really fresh sardines, brine them for an hour and pack vertically into pint canning jars. Place in pressure canner and process @10lbs of pressure (15lbs if above 1000ft. elevation) for 110 minutes. I canned some salmon that I smoked following the University of Alaska jnstructions and it was really good.

1: heat sardines and oil to above boiling before you put them in the jars, screw on lid tight with oven mitts

2: further heat the jar in the oven to kill botulism, it needs to reach 260f so set the oven to 400f and cook for 30 minutes

alternatively you can add 5 grams of salt per 100 ml to suppress botulism and only need to reach 160f for 2 minutes

A 22 qt pressure canner costs @ $60. A case of pint canning jars @ $10. Don't know about fresh sardines, but the eqpmt costs are trivial and will last forever.

That doesn't include the cost of catching your own sardines, so a boat, dock fees, maybe some licensing fees, paying folk on the folk, the list goes on and on. It's easier to buy King Oscar if not a professional fisherman.
