what i put in chili changes depending what i have around the kitchen. for example, oh, i have half a jar of salsa open. i'll put that in there instead of a can of diced tomatoes. or i'll throw in that jar of spaghetti sauce instead of diced tomatoes.

beans are always included but it depends what meat i have. turkey or chicken? pinto beans. beef or lamb? kidney beans.

my spices are almost always the same 1 tbls chili powder and 1 tsp cumin. salt, pepper, etc. just trust in the heart of the cards.

can of beans, mince beef, spicy bbq sauce.
crumble and fry mince meat in its own fat, pour bbq, stir a few seconds empty in can of beans.

>1 24oz can of crushed or diced tomatoes
>1 small onion/.5 big onion
>bell pepper
>celery
>2 stock cubes
>whatever beans you have on hand, I personally like kidney and salvador red beans in a 50/50 mix
>whatever meat
If you're a lazy cunt:
>chili powder
If you're a true chad:
>garlic
>thyme
>parsley
>paprika
>cayenne
>ground chiles (i like marash pepper lately, but try something new)

Chop veggies, saute until nearly soft. Set aside.
Sear your meat. Get that shit browned.
Slam in your seasoning mix, make sure it's turned down if you're using fresh garlic.
Put 2 cups water+stock cubes in, bring to simmer.
Veggies back in.
Tomatoes in.
Beans in.
Cook as long as possible, adding water when needed. Gets real nice about an hour in, but generally best when cooked 3h-ish.

One more thing, just in case you're retarded: you can't put dried beans in chili. They won't cook and everyone will laugh at you. Pre-cook them or buy cans.
