>> No.10988755

It's not that easy. For example many guides tell you to turn off the heat after 10 minutes. Now my pots are so shitty and thin, that they hold zero heat and if I follow that advice, the rice just stops cooking and remains hard.

Soo basicaly you just have to experiment with yourt setup.

1) Rinse yo fuckin' rice. Wash off excess starch which tends to cause more 'foaming'.
2) Lower to fuckin' heat. You're not trying to roast the rice to death. Bring to a boil and simmer, or better yet just use boiling water and cook on a lot heat.
3) WATCH YO FUCKIN' POT. Even with 1 and 2, boiling rice can still go from fine to a fucking volcano if you don't keep an eye on it.
4) Buy a rice steamer and do it in the microwave.

Then rise the rice first, ideally more than once if it's long-grain. Add it to the pot, then pour in boiling water. Don't add a shitload, if the water gets low then you can top it up, but only a little at a time, you don't want it sodden. Watch the pot and adjust the heat accordingly.

Get a (proper, locking lid) rice cooker or pressure cooker. Rice doesn't cook completely or properly in an open pot, even the Asians didn't really start eating it until they developed ceramic pressure cookers.

If you're going to insist, use a bigger pot and lower heat. Like pasta, filling that shit 3/4 full and cranking it is asking for a mess. But it'll still taste worse and be less nutritious than if cooked under pressure.

I had to chuck the old rice cooker after black mold began to develop and had never cooked rice on a stove until about 2 weeks ago. Only took a few makings to narrow down what to do right.

Rice cookers use a 1:1 rice and water.
Stove tops (in my case) use a 2:1 ratio.

Cooking the rice in boiling water for 5 minutes prior to turning the temperature down to low seems to help it cook slightly faster. 25 minutes later it's done and ready to be fluffed; rice cooker quality every time.

I'm gonna guess you have a coil stove top. Get that bad boy almost boiling and then turn down your heat to achieve the simmer. Coil stove tops hold their heat for a long time so once it's boiling if you turn down your heat it's too late and the coil won't cool off fast enough and burn your rice. Perhaps just try the whole process at a lower temp and cook it longer to see if it comes out any better. If you have a gas stove you're hopeless

I'm no expert but this is the best method I've found that works best for me.

>Wash rice the best you can, basically until the water is just slightly clear
>Use a 1:1 ratio of water to rice
>Add rice to water in pot
>Turn heat up until water comes to a boil
>Leave it until the water at the top has steamed off, about 10ish minutes. You can stir it if you want.
>When most of the water is down, turn the heat real low and cover, let simmer for about 8 minutes. Most importantly DO NOT STIR at this point, just leave it.

I mostly just use jasmine rice so I dunno how it works for other types. Take it as a you will.

Here's my fool-proof method:
>put 2 cups jasmine rice, 1 tbsp butter or oil, and 1 tsp salt in a medium pot over medium-low heat
>toast/fry until grains are creamy white and smell nutty
You can skip the toasting step if you're in a hurry, but it does add flavor.
>add 2.75 cups water and 1 tsp garlic powder to pot
At this point I'd like to say that people who recommend a 1:2 ratio of rice:liquid are insane. That much liquid makes the rice super mushy if you cook until all the liquid is absorbed. Maybe it works for some varieties of rice, but not for any I've tried. Anyway,
>bring to a light boil, uncovered, then cover and drop the heat to its lowest setting
>simmer ~15 minutes or until almost all of the liquid is absorbed
>kill the heat and allow the rice to sit, covered, for 10 minutes
>fluff with a fork and serve
I haven't fucked up a pot of rice in years with this method, and it's scalable for any amount of rice.
