I just made chili verde in my instant pot.

I roasted 3 poblanos, 4 cowhorns, 4 Serrano's and threw a fresh chili arbol in along with 6 cloves garlic and a lb of sliced tomatillos.

I used 5 lbs trimmed pork shoulder cut into chunks with salt and pepper and browned it.

Pressure cook all ingredients 30 minutes, remove pork, add fish sauce, immersion blend and done.

Mex fags, any tips for this to be even tastier?

also roast the chilis over wood or charcoal. same goes for the meat

some Mexican oregano would be a good seasoning to add.

blend chiillis tomatillos and garlic to make a sauce beforehand, make lots and save it for future use in marinating, cooking, garnishing, topping, or simply chips and salsa.

that sauce is more commonly known as the ranchera sauce, it uses dried and fresh peppers, onion, garlic and tomatoes, all roasted and blended. as for onion in salsa verde, you can use onion powder if you don't like the texture of onion pieces, same with garlic.
