Greetings yall

I have 4 bushes of pic related (Thai chill) that will burst into redness in a week or two. Had no idea they yielded this much but I am fucking thrilled. Any ideas, dishes, pepper sauces, pastes, or something to do with bulk peppers and not waste?

smash them in a mortar and pestle
add fish sauce and lime

and you got yourself a very nice condiment that pairs well with any meat

Peppers freeze and dry great, so after you make your sauces, freeze and dry excess. Green thai peppers are used in thai green curries and the red for red curries so collect both.

I think those are called bird shit chilies, they're really good. Enjoy. Use some then freese the rest, throw them into a ziplock freezer bag, don't bother to wash them first, just throw them into a bag and stuff them into your freezer.

I do this with chocolate habaneros, they're only available for a short period of time so I buy as much as possible, stuff them into freezer bags and throw them into the freezer to I have enough for a year. I don't wash them first becaue I'd have to do it afterwards anyway so it makes no sense to do it twice.
