Sup /ck/? I work and live in Artesia, CA. The fucking hometown of pajeets in LA county. While they all stink and are a general blight on humanity....their food is absolutely god tier. Let's talk about it guys. I rarely, if ever, eat meat...and I can't find a cuisine better for a plant based diet. Vegetable korma might be one of the best things I ever ate. Something about the nuts and raisins in a savory dish does things for me.

not that familiar with Indian food, although so far everything I've tried was great, but if you need recipes that really treat their veg good you should read a bit about Iranian food
they do some amazing things with eggplants especially
also check out ash-e reshteh; it might not be pretty but it's really great and one of the comfiest things I've ever made; also Loobia Polow, and (the vegetarian version of) Tahchin
pic related is my attempt at regular Tahchin. which has chicken thighs in the filling; you can replace that with the veg of your choice (eggplant or some kind of squash)
