Getting lots of cucumbers this year. Going to make tzatziki later today, but I'm running out of ideas to use it for. What are some summer dishes you guy make with cucumber? (Please not just another salad)

Cut a few slices off, put them in a glass with gin and tonic. Drink and repeat when empty. Look up okroschka, it's a Russian cold soup. Very nice during hot summers. Try to pickle them. Or make fermented pickles.

Step 2: add a thin cucumber slice
Step 3: add deen
Step 4: Put a stripe of your favorite specialty mustard across the top.

Slice onto a bagel with cream cheese. Sprinkle with dill.

Asian quick pickle for side. Slice, sprinkle with rice vinegar (seasoned or regular) or lime juice (I buy coconut vinegar from thailand sometimes), couple drops of fish sauce or toasted sesame oil, garnish with fresh sliced red chili or black sesame.

Tea sandwiches. Soft bread, smidge of mayo or softened (salted) butter, cukes, thin layer of watercress or arugula. Chill in plastic wrap. Enjoy out on the boat or other hot day activity.

Gazpacho. Blender + cukes, bell pepper, onion, etc + V8. Chill. Splash of lemon, sherry vinegar or whatever to spice it up.

Tabbouleh or other grain/pasta salad. Ripe veg, marinated grains, fresh cheese like feta or fresca, and one herb.

marinated cucumbers are great, and you can season them in all kinds of different ways.
i prefer to salt the cucumbers first, to draw out some of the water, which helps to keep them crunchy after marinating.

I tried that of curiosity with the juice I had left of the tzatziki, wasn't impressed. I might have used a less than optimal mint variety though.

make cucumber syrup + candied cucumbers

1. slice up some cucumbers and put them in an airtight bag with lots of sugar
2. wait about a day
3. remove liquid + store liquid (this is the syrup)
4. bake the slices at a low temp to dry out fully (these are the candied cucumbers)

Home grown cucumbers have a really sharp taste and slight astringent nature, depending on the cultivar. If you're gonna pickle, and they have that character, try to add a bit of sugar to your brine to cut down on that.

I just eat them out of hand with some salt, or do a variety of salads with them. They really are a treat to have.
