My fellow Amerifats, why the fuck are you like this? A roast does not need fat, neither does a steak or chicken. If you can't sear a steak in exactly half a tablespoon of real butter, not "margarine" aka cancer spread, how can you call yourself a passable cook?

Sure, you could. But why would you want to?

Having sufficent fat to fill all the gaps between the steak and the pan is going to give you the best possible sear.

And having extra to baste the steak with while it cooks like the French do is god tier.

So you can use the highest heat setting without added fats smoking. People complain about the smoke when searing a steak over high heat even with higher smoke point fats. You can still finish it with brown butter after the initial sear though, it is tasty.

You don't need to use the highest heat. Malliard reaction happens well below the smoke points of high-smoke-point oils.

The only "Complaining" you'll hear is from people too inept to turn the knob down.
