Why would anybody eat this overly sweet stuff rather than a cheese, cream, or gravy based pasta?

If you are referring to corporate manufactured sauces, they add shit tons of sugar to appeal to children, and get them addicted to sugar at an early age. Most don't know the actual taste of a homemade tomato/red gravy.
Thank god I got my own garden.

They add sugars to even out the difference in flavor between the crops of tomatoes, for consistency.

A well-made homemade gravy will be pretty sweet, sure.

The cheap brands add sugar as a shortcut to make shitty sauce somewhat approximate the taste of a properly cooked one.

Jarred sauce is often times overly sweet. Bolognese or even just a homemade marinara isn't sweet like that. That's up to you as you make it. Stop being gay. It brings your family shame.

This actually sounds great. It would have to be a thick gravy to stick to the pasta.

Anyone got recipes?

Not him, but I do something similar with a chopped london broil cut. Slowly cooked to tenderness with onions and mushrooms. I don't fuck around with a pot roast where it doesn't belong. Your idea sounds like a stringy mess.
