quartered red potatoes, mix in bowl with butter, olive oil, garlic, salt, and pepper, thoroughly coat, potatoes then put in over at 400 for an hour flipping them twice

can pair this with literally anything, I pan fried scallops with butter/olive oil salt and pepper and steamed some veggies with them for tonight
