What the fuck do I do with salmon heads? I'm thinking soup, but what kind of soup? I'd like to do something involving red wine but recipes seem to favor white wine instead. Could I just wing it with something in the ballpark of italian flavors and do well assuming I'm confident in my abiility?

well, theres a lot of good meat in the collar. it's good for searing or baking or you could brine and smoke or bake everything, scrape off all meat, and make a salmon mousse or rillette.

i think fish soup is kinda gross usually but something like a tomato salmon bisque or bouillabase might be dope

Thinking something tomato based but open to suggestions. I like fish soup but it doesn't get reheated so I usually make it in a cast iron bowl by portion, this is my first time doing a larger batch or working salmon heads into a soup.

They make an awesome stock. I split them down the middle, then sear them in a pan (both sides). Stick em in a saucepan, add water, and simmer very gently for about 45 min. Now you have a delicious, but very basic, fish stock.

You can use that stock for all sorts of things: soup, seafood stews, gumbo, sauces...

If you wanted to go italian it would be great with some white beans, tomatoes...maybe some short pasta thrown in?

Seek out fish markets that take pride in their product. Not all fresh frozen is created or kept equally. If the butcher is also the fishmonger and store is predominantly asian with a small cookery there you're in the right kind of place.

Was leaning towards this since it's familiar territory. Thinking about adding some clams in shell and some other seafood to the mix. Do you think the salmon stock would respond well to red wine being incorporated into it? I plan on leaving the head in the soup as presentation is secondary to flavor and the group I have coming are big fans of seafood. There will be no leftovers.

Clams would be a great idea. If you can get some good shrimp or prawns that would also be excellent. If it were me, I'd take it Thai style and make tom yum (assuming you can get the requisite herbs). Your wine idea didn't occur to me but I think it could work if you got a good hard sear on the heads. You need a robust meaty element in the stock to counter the wine. Grill the heads & shrimp if possible.

do what other anon said, make stock and cook down some tomatoes and italian herbs and shit in it, puree, cook beans, cook off some spicy italian sausage deglaze with tomato fish puree, add beans/butter/lemon juice and garnish with some fennel/dill/parsley or maybe mint dressed in olive oil and lemon juice.
