I like Brussels sprouts roasted with a little butter, salt, pepper, drizzle of maple syrup, and some chopped candied bacon. Candied pecans are good too.

cook bacon, drain, reserve grease, chop bacon. toss sprouts in bacon grease with salt, pepper, and chopped onion. roast in oven, add in cooked bacon 5m from the end.
>mashed cauliflower
boil cauliflower and mash with an immersion blender. add butter, cream cheese, milk, salt, pepper, other spices. can top with shredded cheese and bake if going the extra mile.
>sweet potato fries
peel sweet potatoes and chop into fry shapes, parboil for just 2-3 minutes to soften, remove drain and dry. toss in oil, smoked paprika, salt, sugar, and cinnamon, bake till crispy.
>zucchini/summer squash
roast in oven with whole peeled shallots and a tiny, tiny amount of oil.
>mustard veggies
I buy this lemon tarragon mustard from Kroger. Get a bunch of mixed veggies chopped (squash, broccoli, green beans, cauliflower, carrots, zucchini, asparagus, parsnips, radishes, whatever you like) and coat with mustard thinned out with a little water. roast in oven. you can use any other sauce or mustard in much the same fashion.
>sweet potato casserole
this is something I make every year for christmas and thanksgiving. bake, peel & mash sweet potatoes, mix with whole dried cranberries, cinnamon, nutmeg, brown sugar, butter, and cayenne pepper. fire-roast a poblano pepper, chop it and add to sweet potato mixture. spread it casserole dish and top with brown sugar/butter/pecan crumble and bake. 10/10
>lemony green beans
easy one. add olive oil and lemon juice to your skillet on medium heat, saute prepared beans in oil and juice until preferred doneness, I like to leave them with some snap left to them.
>rainbow chard
cut the stems from the leaves; chop stems and leaves separately. saute stem pieces in butter or olive oil until mostly softened, add garlic, salt, pepper, bit of lemon juice, bit of whole grain mustard, chicken stock, and chopped leaves. simmer down until leaves are just cooked.

There's only one good way to cook brussle sprouts:
Blanche them, halve them, then sear them with chopped bacon flat side down until they brown. I might try it with pecans
