Most people do not like the taste/texture of beef liver, but I've had it since I was a very little kid so it kind of imprinted on me. It has a very strong flavor.
It used to be that a lot of diners would serve it up until ~20 years ago but some still do.
I make it at home sometimes but I prefer to get it at a diner.
I've found a couple places in my city that still serve it.
The nice thing is that so few people actually like it that it's super cheap compared to other stuff at the butcher. Liver in general is also one of the most if not THE most nutritious meats you can get.

>Slice into smaller strips
>Dredge liver in flour or whatever breading you prefer
>Melt a good amount of butter over medium heat
>Dice in an onion and stir occasionally until carmelized
>Cook the liver in that, around 2 mins each side
>After removal from pan, deglaze with stock and whatever cheap white wine to make sauce to pour over
