What's /ck/'s secret ingredients for the best burgers ever? For me it's Secret Aardvark Hot Sauce.

I know browning/the maillard reaction tastes good. Also love a crunchy, crusty sear and the smokey flavor of charcoal grilling.

BUT

I gently bake my burgers in the oven at 350 F. They're so tender and succulent.

If I had charcoal going, I'd grill them. But I'll opt for baking when I don't.

Venison. I add pork fat in the grind to bring it down to about 85% lean. It tastes amazing and 2 separate animals had to die for each burger.

Sometimes I add a bit of buffalo just to make it a 3some.

Pic related.

The trick to any good burger is minimal handling of the ground beef as the fat will stick to your hands. The ground beef only needs salt and pepper, start to add more seasonings and you're entering meatloaf territory.

Grind chuck steak and lamb at about a 2:1 ratio and grill it. You're welcome.

Personal lubricant. I'm not joking here, most lube is made up of sugar, water and an emulsifier/preservative. If you add it to ground beef it helps it stick together better and gives it a subtle sweetness and juiciness that nothing else can match.
