I'm pretty sure most recipes lie about prep and cook time a bit to make more people try the recipe. Or they're just bad at estimating how long it takes to do things, that happens to me sometimes where I'll guess it'll take me about 30 minutes to prep and cook but it's closer to 45 minutes.

In my experience most recipes greatly overstate the prep time. If you're finding that you're taking a lot longer than what the recipe states then find and fix the problem. Get rid of distractions. Make sure your knives are sharp. Unless you a totally new beginner there's no reason why prep should be taking a long time.
