Greenland sharks are almost too cool to eat, to be honest.
They live to be like 500 years old and only sexually mature when they're a hundred.
They are so full of urea that the fermentation process is required to make them non-toxic to eat. It amazes me that someone figured that out like a thousand years ago. It also amazes me that the grandkids of the shark he ate could be alive today.
The taste and texture of kæstur hákarl is pretty good actually, but still very much an acquired taste. It's the smell that overwhelms most people. The taste is much milder.
