talking out of my ass here, but i think it's to create an illusion of depth, to break up the surface with lines. i do this with hummus and i really like how the olive oil catches and pools between the swirls

yeah this dish i put the hummus in is godawful. i already know. i also apply this swirling method to refried beans. yes i enjoy eating refried beans, they're actually not to bad on their own from scratch
