if i ever seen liver and onions at a restaurant, i'll order it. might just try making it home someday.

Offal is good. I've eaten lots of heart, liver, lights/lungs, brawn, sweetbreads etc.

I'm going to NYC soon, i've heard about chopped liver, is there any good Jewish offal stuff I should look out for?

I make giblet gravy on turkey based holidays and I enjoy goose pate on crackers, that's about it. Also pork pate as a sandwich condiment

Sweetbreads are delicious, I regularly eat pork liver paté, and at holidays chicken liver mousse is a tradition on my moms side of the family.

I've tried various hearts, pigs ears, tongue but that's about it. Did have haggis once but it's mostly all ground up.

Pig: very assertive flavor and texture - I like it, but I can see why some might hate it; dirt fucking cheap, literally cheaper than bread. Breddy gud.
Beef/lamb: on the bucket list too.

Also, anybody here ate/enjoys testes? I've passed on them in the past for fairly obvious reasons, but this thread seems pretty open-minded about weird animal parts. inb4 predictable meme responses.

Rooster testicle yakitori is one of the best dishes I've had, as far as offal goes. Really difficult to describe to somebody who hasn't had it, though.
