Why the hell are ground beef tacos considered the staple of Mexican food in America? Never have I seen a Hispanic family or authentic restaurant actually make it, let alone like it that much.

Cultures come to American and mutate, what the hell do you think "melting pot" implies? It's the same way American Chinese food is not the same as that in China, it's because the Chinese here blended with the locals and their cuisine mutated into something that's a combination of both cultures tastes.

It's a tex-mex staple, ground beef isn't even a typical ingredient in mexican cooking.
The tortilla deep-fried into a U shape was popularized by taco bell.
Mexicans don't even know what it is, taco bell attempted to penetrate the mexican market and they renamed their crunchy tacos to something like "taco-stada" because that's what it looked like, but sales didn't pick up.

When we cook ground beef for, say, tacos or rellenos, my wife calls it a Picadillo.....I prepare it just like my mother in law.....she's from the Acapulco area and earlier in life...Ciaucingo...bad spelling....I use a blend
of pork and beef....medium grind.....toss with black pepper, cumin, and salt. Cook at pretty high heat in a saute pan.....till browned...then add a blended mixture of onion, garlic, fresh tomato, salt, and serrano or jalepeno pepper.... couple of vine ripe tomatoes, although any tomato will do....put all in the blender till smooth....add it to the hot saute pan....cook until the liquid is consumed......at home I add, diced sweet potato, diced onion, and diced carrot.....perhaps a bay leaf or two.....good luck....perhaps not traditional, but the way they do it in guerrero.

Taco bell was born by a white guy going to a mexican restaurant and ordering their tacos. They serve tacos dorados de res with lettuce and cheese. He took that idea and used ground beef instead of shredded beef then added yellow cheese and mass market taco shells.

Those taco shells can be stored sealed for ages. Most tejanos would fry up some corn tortilla for similar effect, but white people won't eat peasant food unless you turn it into a fucking chip.

And I guess it's really easy to prep if your main breads don't need heating AT ALL.
