Angus is a specific breed of cow native to Scotland in the same way that Wagyu is a specific breed of cow native to Japan. When you buy Angus or Wagyu beef, it is assumed you are getting beef from one of those specific species.

Of course, it is worth noting that while these specific breeds of cows are native to the aforementioned areas, they have both been imported to and raised in the United States.

The point of making the distinction between angus and non angus...as well as wagyu...is the degree of marbling. Marbling is relevant when talking steak but means shit once the meat is ground especially since the scrap and trimmings have little to no marbling at all regardless of cow quality.

People paying a premium for ground angus and even wagyu are being ripped off.
