There's an Indian place near me that is just fantastic.

I'm one of the few white people who goes there, so the staff knows me pretty well which is cool.

Indian curry is fairly popular in this country, so I've taken a few dates here too. I wonder if they mistakenly think I'm good with women.

I like it alot but I have no fucking clue how to make a somewhat decent curry sauce.

I tried with different curry pastes, garam masala, different brands of tumeric.

I think if you are not cooking this stuff on a daily basis its not worth it to invest into all the spices there are

Honestly it has little to do with the aforementioned racism, but being a person who has cooked for friends, I've constantly been told (read the following in a voice with the highest degree of mockery you can imagine) "oh you like to cook, anon, you'd love Indian food, it's got so many spices blah blah blah" and I've given it a chance; I've been to a number of Indian restaurant, tried a number of different dishes, and every single one has been pic related.

I have three really good Indian restaurants in my neighborhood. One is a mainly northern Indian place, serves a lot of lamb, goat, and chicken dishes, and it's good. But the other two are southern Indian vegetarian places and they fucking blow that other place out of the water. Their spices are better, their food is fresher, their sauces are hotter, basically just better in every way. Best navratan Korma ever, best samosas, best dosas, best utthappam, best chaat, great daily thali, and one of them sells sweet paan, too, which is the best digestive I've ever tried.

I've been trying all the Indian places in my city, and unfortunately many of them are this.

The bottom pic is one of the best places I've found, and thank goodness for it. The quality is so much higher than the other shit.

The biggest ephipanies for me when cooking indian food were:
1) Whole spices. Toast them in a dry pan first, then grind them.

As a corollary, if you're stuck using pre-ground spices understand that most brands of curry powder and garam masala are awful. I've only found a handful that were passable, and they are expensive. Ground spices lose a lot of their flavor as they sit, and most brands of mixes tend to skimp on the expensive spices like cardamom and saffron.

2) Many dishes contain a lot of onions as their base. Cooking the onions must be done low-and-slow. It's just like caramelizing onions for French Onion Soup--it can take 45 minutes or more to do that step alone.

Eating it feels awkward as there's too many things to dip into and chutney/mint/yogurt don't pair well imo. I also don't like the lack of recognizable ingredients since everything is turned into a sauce or fritter. It's still comfy to have it once in a while though.

I’m disgusted by Indian people in general and never want them touching my food. I’d rather have a nigger prepare my food. I am a pretty adventuresome eater (I grew up with a norwegian grandmother who routinely forced lutefisk and sheep head on me as a kid) and I have no fear of ugly or gross looking food.

But the smell? Yeah that's a big part of eating and if something smells like dogshit I am not touching it. I went into an indian restaurant with some friends once who told me how great it was. One sniff and I was good. No thanks. Maybe it does taste great but then maybe fresh dog shit tastes great too but I will never find out.

I cringe profusely whenever someone speaks of food as if it's the culmination of culture and adopting foreign cuisines is synonymous with 'cultural enrichment' and understanding other cultures. Cringy as fuck mateys.

Indian food is good. I prefer it filtered through the British Isles, which is the way most people prefer, so much so that it has made its way back to India in this form. That being said, traditional Indian dishes that have been refined with some care for measure and cooking techniques are heavenly, just harder to come across the quality stuff and the chefs who don't have shit particles on their fingers.

Indian food varies from state to state, hell even the whole indians are vegetarians is a bit of a meme. Even the whole north india has more meat dishes is a meme as its the west& north part of india that eats more vegetarian food while the south & eastern part of india eat a ton more meat.
