Except none of those things actually apply. A cheese curd is just fresh cheese. Are you going to say fresh mozzarella isn’t cheese? You can press cheese curds together and age them to make stronger cheese, but that doesn’t mean it isn’t already cheese. Mashing it together and aging it isn’t the difference between being cheese and not being cheese. It’s already cheese whether you like it or not.
