I picked it up heavily in the military because the food was so bland. I didn't use hot sauce prior to that in a big way. Some dudes used to collect sauce packets from fast food places and save them in a grocery bag to take on deployments.

Dave's gourmet, usually get the ghost pepper or scorpion pepper sauces. They're not the best sauces but they have a lot of heat, long shelf life unrefrigerated, and relatively inexpensive compared to better sauces.

Higher quality sauces imo tend to have more sweet with the heat, more seasoning in general and less vinegar and thus tend to expire quickly and need to be refrigerated and are more useful for adding flavor and seasoning to a meal rather than adding some heat to an already well seasoned dish.

Anyone not an idiot will tell you you dont have a 'preferred' hot sauce. You use different sauces for different occasions. What this thread really should be is what brand for that specific type of sauce is best for the purpose you're using it for. And the answer is: For Vinegar based pepper sauces to be used on chicken jambalaya et cetera, is trappeys, the best aged vinegar based sauce is crystal extra hot with a close second Tabasco.

The best green sauce is El Yucateca Habenero. The best mexican vinegar hot sauce is Tapatio. The best chile paste sauce is the original Sriracha and Sambal Olek is the best Chile mash paste.
