I have a few question:

Is adding sugar/butter to carrots bad? and by sugar I mean like half a teaspoon to a pan of carrots with water, then boil them for 20 mins. Drain, add a small knob of butter, salt/pepper.

Using the excess water/fat from a cooked piece of meat, for example a chicken, to make gravy is the correct way?

Cooking roast potatoes in a tray of animal fat or oil is the correct way?

Nope, not in any way bad. Like the others I think carrots are sweet enough as they are naturally, but a half teaspoon is not going to harm you.

Do you mean on a tray and the potatoes have a coating of fat/oil, or do you mean that the tray is actually full with fat/oil? A coating is fine, if they are swimming then that is too much.

Nah, but its the way my family (both mother and father) have always made a "sunday roast", but compared to my friend they dont add anything at all and have it very barebones.

It's fattening and serves no purpose. If you want a healthy alternative, try finding a fruit that works well with carrots, or maybe a reduction or compote.

Never use all of it, skim the fat off the top if possible.

Boiled potatoes so the outside if soft but the middle is still raw, into a roasting tray with some oil or fat so that it has a thin layer on the bottom of the tray, like pic but across the whole bottom of the tray so every potato has oil on it

1. carrots are sweet. You dont need to add sugar. If you do, i recommend brown sugar and butter sauteed in a pot with the carrots.
Also, if the carrots are not in large pieces I would recommend steaming or roasting over boiling.

3. a coating of oil/fat is pretty much necessary. It doesn't have to be swimming in it. also salt.

Nah you're fine. IMO carrots don't really need much by way of sweetening but some brown sugar and butter are sometimes nice.
