Just a neat little thing I bake sometimes! Great for cold days! May post soup later.

1 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/4 cup Vanilla soymilk
1/2 tsp salt
2 1/4 cups flour
1 tsp baking soda
6 oz semisweet chocolate chips
4 oz dark chocolate chips

>Set oven to 350 degrees
>Mix butter and sugar in electric mixer until fluffy
>Slowly add the milk, and then vanilla
>Mix dry ingredients in separate bowl, add to creamy mixture then mix
>Mix in the chips
>Put in balls onto parchment paper
>Bake for 10 minutes

They are light and fluffy, with a balanced profile. I can recommend adding nuts, as they can give the needed crunch.

Perfect Gluten Free Chocolate Chip Cookie Recipe

2 1/4 cups - bolts red mill 1 to 1 baking flour
1 tsp - baking soda
1 1/2 tsp - salt
3/4 cup - lard
1/4 cup - butter
1 1/4 - cup packed brown sugar
1/4 - white sugar
1 tsp - vanilla extract
2 - large eggs
2 cups - chocolate chips
1 cup - chopped pecans
1 cup- chopped walnut

Chill - for 20min
Dump onto parchment paper and roll into log.
Freeze for 24 hours, cut or break peice s of log off and roll into balls however big you want cookies.
Bake at 300°F for 8-14 minutes, until edges are lightly brown.

Let set out and cool for at least 10-15 minutes depending how cool it is in your home. I usually cool mine outside in cool day or in the fridge/freezer.

Making healthy cookies is pointless. Just make tasty cookies and don't eat as many.
