Yeah, you won't be able to even eat the packaged shit after you start making your own because most packaged stuff isn't actually air dried naturally. Make sure to get silverside beef and cut it thin (or get the butcher to do it for you) and brine your meat overnight and then pat it dry before applying a spice rub. Up to you what you use; my brine is cider vinegar, liquid smoke and light soy sauce. Spice rub I use normally is salt, pepper and paprika.
