Cod is great.
Breaded and deepfried for fish and chips, boiled, or salted and then boiled.
Salted cod becomes really nice and flaky.
You can cut a whole fish into "steaks" or use fillets. Alternate layers of coarse salt and pieces of fish in a bowl or bucket and put it in the fridge. I prefer to give it at least a week. It will keep very very long this way.
When you're ready to eat it you take the fishpieces out and put them in cold water, in the fridge. Depending on how large the pieces are and how salty you want it you may want to change the water a few times over the next 24 hours. I like mine quite salty so I change the water once for fillets.
Then a very quick trip into boiling water.
Serve with potatoes and a basic white sauce with a mix of mustard powder and water on the side. Or a parsley sauce.
Fried diced bacon is a a classic side for this, as well as dill pickles or pickled red beets.
Keep plenty of beer on hand because you'll get thirsty. This is a bonus of course.
