The heat gives it that look, after cooking the ground beef dressing in the pan I put the lettuce right in and mixed it.
I call it salade de boeuf chaud.

1) They shock it in ice water and maybe run it through a salad spinner before service.
2) Their coolers maintain a more even temperature so vegetables don't get the pulsed over-cool or sometimes even freeze that you can get with home fridges. Your refrigerator probably destroys cell-walls quicker.
3) They buy in larger portions and use it quicker than a grocer sells it; so they often get the preferred produce from the food-service provider.
